While most people today consider American Chinese food to be merely "Chop Suey" and cheap takeout, there was once a small golden age for Chinese cuisine in North America. In the 1930s and 40s, while China was embroiled in war, America was experiencing a period of peace and prosperity, and Chinese cuisine opened a new door for locals. Bear paw dishes from the Manchu Han Imperial Feast, and renowned dishes nearly lost in Hong Kong such as Pipa Yanwo (Pipa Bird's Nest) and Fengwu Ruiqun (Phoenix Dance in Auspicious Gathering), miraculously enjoyed a brilliant period in a foreign land.
For three years, guided by a cookbook, the author traveled across the east and west coasts of the United States, visiting Xinhui, Hong Kong, and New York. From the National Archives of the United States, Chinese American museums, and oral histories of restaurant descendants, the author pieced together the living conditions of local Chinese Americans nearly 100 years ago.
