This book is the new work of the author of "Song Banquet", which continues the characteristics of the previous work: using contemporary ingredients and preparation steps to restore the delicacies recorded in ancient books, combined with essays explaining the historical background of the food, presenting a food culture work with cultural depth and rich picture materials.
"Yuan Yan" examines ancient books such as "Yinshi Zhengyao", "Jujia Biyong Shilei Quanji" and "Yunlintang Food System Collection" that record the cuisine of the Yuan Dynasty, and restores and presents 35 Yuan Dynasty delicacies, arranged in order of main ingredients (beef, mutton, poultry, seafood, vegetables and fruits), covering hot dishes, cold dishes, soups, noodles, and drinks, with detailed preparation step-by-step diagrams. At the same time, it uses Yuan Dynasty songs, dramas, calligraphy and painting documents to outline the customs and culture of the Yuan Dynasty.
The Yuan Dynasty was vast and ethnically diverse, resulting in vast variations in natural products, culinary techniques, and flavors across different regions. The Mongols, during their campaigns east and west, encountered and integrated the culinary cultures of Central and Western Asia. Furthermore, various ethnic groups entered the Yuan Dynasty as officials, missionaries, and merchants, bringing foreign cuisine to the people, which then blended with local cuisine. Consequently, compared to previous works, this book features dishes that utilize more mutton and dairy products, with Northwestern and Central Asian influences, showcasing the unique blend of ethnic groups and exchanges between the north and south during the Yuan Dynasty. While the total number of dishes included has been reduced, the book offers a more detailed and in-depth exploration of subsequent culinary culture and historical customs.
